Ingredients:Olive Oil, 1 tbsp (remove)Plantains, 110 grams (remove)Carrots, raw, 79 grams (remove)Tomato Sauce, .5 cup (remove)Green Peppers (bell peppers), 1 tbsp (remove)Cilantro, raw, .125 tbsp (remove)Garlic, .5 tsp (remove)Onions, raw, 1 tbsp chopped (remove)Chicken Breast, no skin, 327 grams (remove)
Directions
Warm dutch or iron cast pot, when hot the olive oil, then add the green peppers, chopped onion, garlic and cilantro, stir for 30 seconds. Add tiomato sauce and let simmer for 1 min, then place chicken and scatter the sliced carrots and plantain (if desired). Add 1 cup of water and let cook on low for 40 minutes. May serve over cooked brown rice...
