2 tsp Curry Powder1/4 tsp Cumin1 tsp Sea Salt2 tsp Lemon Pepper1/4 tsp Ground Mustard Seed1/2 tsp Ground Thyme2 Tbs Basalmic Vinegar2 Tbs Mushroom (dark) Soy Sauce1 Tbs Extra Virgin Olive oil1/3 Cup Strong Brewed Coffee2 tsp Cayenne Pepper (Optional)1 tsp Garlic powder
Mix all ingredients in a 1 gallon zip lock bag, put in ten chicken thighs and shake or roll bag to coat chicken, refrig for 30 mins at least ( I leave overnight).
Light fire and let coals ash over, heat should be around 325.
Bank coals to one side.
Lay chicken on grill not directly over coals, cook until done.
