Coconut Rice w/Mandarin Oranges

Ingredients
1 cup Jasmine Rice3/4 cup Light Coconut Milk3/4 cup Water1/2 cup Mandarin Oranges1/3 cup toasted coconut
Directions
Rinse rice with warm water until water is clear. Add 3/4 cup water and 3/4 cup of coconut milk to medium saucepan.
Cook 15-20 minutes
Once rice is finished, add the 1/2 cup of mandarin oranges, shredded coconut.
Serving Size: 1 cup
