Simple Mustard-Free Potato Salad

Ingredients
12 medium potatoes, boiled and peeled, diced12 large eggs, hard-boiled, sliced3 cups mayonnaise1 large onion, dicedSalt & Pepper to taste
Directions
Makes approx. 32 1/2-cup servings


Boil potatoes with skins on until a fork can be easily inserted. Let cool and peel.

Hard-boil/cook eggs and remove shells.

Dice potatoes and onion to desired size. Slice eggs. Mix in large bowl and add 1 cup mayonnaise at a time until desired consistency. Salt and pepper to taste.

Garnish with paprika and fresh parsley.
