Breaded Chicken Parmesan

Ingredients
12 ounces white meat chicken (one double breast)1 tbsp grated Parmesan cheese1/4 cup Italian-style bread crumbs 1 tsp garlic powder 1 tbsp onions, driedCrushed red peppers if desired1 -2 tbsp olive oil
Directions
Cut the chicken breast horizontally (filet it) so you will end up with two thin pieces.
Rub each piece with olive oil.
Mix dry ingredients together and pat each piece with the crumb mixture until well covered.
Bake at 375*F for about 20 minutes.

    This recipe was amazing. Even more suprising, i also made it with gluten free bread crumbs for my son. The rest of us had the original recipe. Both types came out so good. My whole family loved it! Remember to turn the chicken halfway through the cooking. Thanks for a winning recipe. - 1/4/09

    This is sooo good.. make sure you turn it halfway through, and I didnt do tha pepper flakes, but I did use just a pinch of cayenne pepper (powder) in the dry ingredients before I rubbed the chicken in it.. it gives it a little flavor kick! Im making it again tonight! - 12/16/08

    This was so awesome! I know people were confused on how to cut the chicken, but if you lay the chicken down on a cutting board and run a knife through the middle of it (from side to side), so you have two identical looking pieces, just thinner.     Very tasty, though I admit I added a bit of low fat shredded cheese on top about 10 minutes before it finished cooking to get a little bit more traditional taste. I used chicken tenders rather than chicken breasts because they are a bit cheaper. I also poured some marinara sauce over the top. - 7/27/08

    I always dip the chicken in egg & milk (or egg beaters & splash of non fat milk. I also substitute part of the bread crumbs with flax and wheat germ, no one knows the difference. I have also frequently made it with low fat/non fat mozzerella cheese & sauce, or just cheese. :) - 8/19/09

    Absolutely delicious! Simple but full of flavor--I do agree with the poster who suggested flipping the chicken halfway through cook time, and also recommend adding the red pepper--gives it a nice kick. Will definitely want this one again! - 9/1/09
