Cucumber, Pepper and Tomato Salad

Ingredients
2 large cucumbers, peeled and sliced2 large yellow bell peppers, diced1 pint cherry tomatoes6 oz. crumbled Feta Cheese1/2 cup lemon juice1/2 cup olive oil Salt and Pepper to taste
Directions
Cut up your veggies, toss in a large bowl with olive oil and lemon juice. Add feta, and salt and pepper to taste - toss. Refrigerate until ready to serve.

Makes approximately 15 1/2-cup servings.
