Chris' Spaghetti & Spicy Bay Scallops

2 Tbs Extra Vigin Olive oil3 cloves Garlic, Minced1 Shallot, sliced thinSalt and Pepper to taste1 oz Dry Vermouth1 14.5 oz Can Fire Roasted Tomatoes8 oz of spaghetti100 Grams of Chopped Portabella mushrooms1.5 tsp basil1 tsp OreganoI package of Bay Scallops, 340 gms1/4 tsp Cayanne pepper, spicier add 1/4 more1 tsp lemon peel zested
Serves 4
Cook pasta according to package directions, using 1 tbs of EVO.
Heat remaining olive oil to medium high in skillet. Add garlic and cayanne pepper and cook for 5 - 6 mins. Add shallots and mushrooms then cook for 2 minutes more. Add tomatoes, basil and oregano and reduce heat to simmer for 20 mins.
Add lemon zest and wine and cook for an additional minute. Turn up heat to medium and add scallop and cook until opaque,, about 5 mins. Remove from heat immeadiately. Divide pasta into 4 servings and top with scallops and sauce evenly.
In a sauce pan, heat
