Mediterranean Tuna Sandwich

Ingredients
1 can of Tuna in water (3 oz.), drained1 Celery stalk (small), chopped1 Tbsp red onion, copped1 Tbsp dry dill weed (more or less to your liking)3 thin slices of tomato1 inner leaf, Romaine lettuce1 Tbsp Extra Virgin Olive Oil1 Tbsp Balsamic or Red Wine Vinegar1/2 tsp Dijon mustard2 Slices of whole-grain bread *Optional***Juice of one lemon wedge
Directions
- Open and drain the tuna from the can.
- Place tuna in a small bowl and flake with a fork to break up the chunks
- Drizzle the tuna with the oil and vinegar; add the mustard
- Chop up the onions and celery and add to the bowl
- Sprinkle the dill weed into the bowl
- Mix all the ingredients well in the bowl and taste (for added seasoning)
- Add the tuna mixture and lettuce leaf on one slice of toasted whole grain bread top with the 3 slices of tomatoes and the second piece of bread
