Easy Peanut Butter Scones

Ingredients
1/2 cup Yogurt - Plain, non-fat3 Tbs Creamy Peanut Butter2 Tbs Granulated Sugar1.25 cup Pancake mix
Directions
Preheat oven to 425F
Mix together yogurt and peanut butter.
Add 1 tbs + 2 tsp sugar. Mix well.
Combine pancake mix with yogurt mixture. Dough will be stiff.
Turn out onto lightly floured cookie sheet.
Pat into 1/2 inch thick circle.
Use a sharp knife to cut into pie-shaped quarters.
Sprinkle with remaining teaspoon of sugar.
Bake 15 minutes until inserted knife comes out clean.
Makes four scones.

(for variety, try chunky peanut butter and/or flavored yogurt.)
