Crust: Crumbs from 16 graham crackers1/2 stick of butter1 tbsp honey1 tbsp flourMush up w fingers and press firmly into bottom of spring-form pan.Filling:16 oz cream cheese3/4 cup xylosweet4 eggs 1 tsp. vanilla1 lemon- juice and grated rindBlend till smooth and creamy. Pour on top of crust and bake at 375 degrees for 25 min's (or until set- in our case 50 min's).COOLTopping: 1 pint sour cream3/4 cup xylosweet1 tsp vanillablend. pour on top of cooled filling and bake at 375 degrees for 5-8 mins.A MUST: Cheesecake must set in refrigerator until firm enough to slice well (preferably 12 hours). If you get impatient, and cut before it is completely set, the top will be runny.
In total the time it takes to make this - including the setting time is around 12 hours or so. but if you're determined to do it quicker, ours set pretty well in 4 hours of refrigerator time.
