Whole Wheat Pancakes or Waffles

Ingredients
2 cups whole wheat flour1 1/2 tsp honey3 tsp baking powder3/4 tsp salt2 eggs1 Tbsp oil1 3/4 cup milk, nonfat1 tsp cinnamon2 tsp vanilla1 tsp lemon juice
Directions
Combine all ingredients in mixing bowl. Stir together with wire whisk. Pour onto non stick griddle for pancakes. For waffles, a little non stick spray on the waffle iron helps to prevent sticking. But not too much or waffles don't brown real well. Makes approximately 12 medium sized pancakes and 12 square waffles. (using 9" square waffle iron)

Serve with 100% fruit spread or applesauce and fresh fruit. Yummy!
