1 Head of Cauliflower8 cups water2 tbsp Butter2 tbsp Part Skim Ricotta Cheese
Put cauliflower into pot and fill with water; bring water to a boil; boil for about 20 minutes or until very tender
Drain Cauliflower and return to pot
Mash Cauliflower as you woul potatoes
Add butter and ricotta cheese
Use salt and pepper to taste
