1 chicken breast, cut into strips1/2 tsp chilli powder1 tsp ground cumin1 garlic clove, chopped or minced1 tsp olive oiljuice from 1/2 a lime2 cups romaine lettuce, chopped1/2 medium tomato, diced1/2 oz low fat cheddar cheese, grated1 tbsp fat free sour cream1/4 cup salsa
Heat olive oil in a pan on medium. Add cumin, garlic, and chilli powder. Simmer on low for 1-2 minutes, stirring constantly. Add chicken strips. Pour lime juice over chicken. Cook on medium until done (5-8 minutes, depending on your stove)
In a bowl, layer lettuce, chopped tomato, cheese, salsa, and sour cream. Top with cooked chicken and serve.

This was super good!! I added chopped yellow & red bell peppers & jalapenos, omitted the salsa & sour cream & used the Reduced Fat Cilantro dressing from Trader Joes. Also heated up some frozen corn & tossed in w/ the lite mexican cheese blend. Amazing! Will definitely make again! - 5/1/12
