Carrot Raisin Muffins

Ingredients
2 cups whole wheat flour2 tsp baking soda2 tsp ground cinnamon1/2 tsp salt2 eggs1 cup honey1 cup (8 oz.) plain, lowfat, yogurt1/2 cup unsweetened applesauce2 tsp lemon juice2 tsp vanilla extract1 1/2 cups shredded carrots1/2 cup raisins1/2 cup chopped walnuts
Directions
Combine all dry ingredients in medium sized mixing bowl. Create a well and add wet ingredients. Stir together with wire whisk. Prepare 18 muffin cups. Scoop batter and fill muffin cups 3/4 of the way full. Bake at 350 degrees for 18 minutes. Makes 18 regular sized muffins.
