Whole Wheat Buttermilk Apple Scones

Ingredients
2 Cups +2 tlbs Whole Wheat Flour¼ cup sugar1 teaspoon cinnamon¼ teaspoon nutmeg½ teaspoon salt¼ cup butter1 cup grated apple½ cup 2% buttermilk1 tlbs 2% milk1 tbls sugar
Directions
Makes 8 servings. Each scone is approx 263 calories

Heat oven to 425 degrees.

Mix flour, sugar, cinnamon, nutmeg, and salt. Cut in butter (mixture will look crumbly) add grated apple and toss until apples are coated. Add buttermilk- mixture will be very sticky. Use floured ice-cream scoop to portion out 8 large rounded balls onto cookie sheet that has been sprayed with oil (like Pam). Pat down until they are 1 inch tall (traditional scones are triangular, flour a surface and make 2 6 inch circles with the dough, cut 4 wedges out of each circle), brush with milk and sprinkle 1 tablespoon of sugar on top.

Bake for about 15 minutes or until golden brown.

    These were very tasty and easy to make. Next time I will try them with Splenda brown sugar to cut down on calories. I might try whole wheat pastry flour also because they were slightly uncooked in the middle. - 1/11/10
