Ingredients:Egg, fresh, 3 large, lightly beatenGranulated Sugar, 2 cup Canned Pumpkin--15 oz can, 1.75 cup Butter, unsalted, 1 cup, meltedVanilla Extract, 1 tbsp *Whole Wheat Flour, 3 cup Baking Soda, 1 tsp Baking Powder, .5 tsp Salt, .5 tsp Cinnamon, ground, 1 tsp Nutmeg, ground, 1 tsp Cloves, ground, .5 tsp Zucchini, 2 cup, shreddedPecans, 1 cup, chopped
Combin eggs and sugar in large bowl, add pumpkin, butter and vanilla. Mix dry ingredients gradually to pumpkin mixture and miz well. Stir in zucchini and nuts. Bake in four small loaf pans (3X7) for 35-45 minutes. cool in pans for 10 minutes. Serving size- 1.5oz slice. (slice each loaf in to 12)
