Old Fashioned Rum 'n' Raisin Sour Cream Cookies

Ingredients
1 cup raisins1/4 cup water1/4 cup rum1/4 cup stick margarine3/4 cup sugar (I use brown - adds more flavour)1 large egg1 tsp vanilla extract1/2 cup light sour cream1 1/2 cups all purpose whole wheat flour1 tsp ground cinnamon1/2 tsp baking soda1/4 tsp salt
Directions
Combine the raisins, water and rum in a small saucepan. Bring to a boil, then reduce to simmer. Simmer until the raisins are plump and the liquid has evaporated. Allow to cool completely.

Preheat the oven to 350F. Spray cookie sheets with nonstick cooking spray; set aside.

In large bowl, beat margarine and sugar until well combined (mixture should have the consistency of wet sand). beat in egg and vanilla until smooth.

In medium bowl, combine the flour through salt. Add half of hte flour mixture to teh sugar mixture. Gently stir in the raisins and sour cream. Add the remaining flour mixture, stirring just until blended.

Drop spoonfuls of dough 2 inches apart onto prepared cookie sheets. Bake in preheated oven for 12 to 15 minutes, until cookies are set but ont yet golden. Allow to cool slightly on the pan before removing to a wire rack to cool completely.

Makes 24 cookies.
