Ingredients
2 Chicken Breasts, no skin, bone and skin removedChili powder, 1 tbspGarlic powder, 0.5 tbspSalt, 0.5 tbspOnions, raw, 0.5 cup, choppedFlour Tortillas, 12 tortilla, medium (approx 6" dia)*Extra Light Olive Oil, 8 tbspMozzarella Cheese, part skim milk, 6 oz
Directions
Pour olive oil into small bowl and set aside. Cook chicken in medium non-stick skillet until done. Turn to low heat. Cut chicken into small pieces in skillet. Add chili, garlic powders, salt, and onion, mixing thoroughly. Remove from heat. Using a barbecue brush, dip brush into olive oil and lightly spread on one side of tortilla shell and drop into second skillet on medium heat. Place 1/6 chicken mixture on tortilla shell. Place 1/6 cheese on top of chicken. Spread olive oil lightly on second tortilla shell and lay on top with oil side up. When bottom shell is crunchy, use a spatula to turn. Serve when bottom side is crunchy.
Serving suggestion: Spread salsa or fat-free sour cream on top before serving.

    Wow, the olive oil alone (at 140 calories per tablespoon) is a diet-buster! And 25 grams of fat is more than I eat in an entire day. But the recipe sounds pretty tasty. I'll pass on this one. - 7/20/07
