Oatmeal Pancake's with Berry Topping

Ingredients
6 eggs2 cups quick cooking oats2 cups 2 % cottage cheese3 teaspoons splenda/sugar baking blend2 teaspoons cinnamon2 teaspoons vanilla extract
Directions
Place all ingredients in blender and mix until smooth.

Heat griddle over medium heat and spray with non stick cooking spray.

Pour 1/4 cup batter onto heated griddle, flip pancake when batter starts to bubble.

Cook until golden brown.

To cook berry topping mix 1 c. blueberries and 1 c. sliced strawberries with 2 pkt splenda in a microwavable bowl. Cook in microwave for 2-3 minutes

Spooned over pancake (about 1 tablespoon per pancake) and a sprinkle of chopped walnuts.

Makes about 12 - 15 pancakes.
