Ingredients
Nonstick cooking spray1 cup Gold Medal® all-purpose flour1 cup Gold Medal® whole wheat flour1/4 cup ground flaxseeds or wheat germ1/4 cup unsweetened cocoa powder2 teaspoons baking powder1/2 teaspoon salt1/2 cup refrigerated or frozen egg product, thawed3/4 cup sugar1/2 cup canola oil1/3 cup fat-free milk1 cup peeled (if desired) and shredded zucchini1 medium-size ripe banana, mashed (1/2 cup)1/2 cup miniature semisweet chocolate pieces
Directions
Nonstick cooking spray, apply to baking dish prior to filling with batter. Set aside.

Preheat Oven, 350*. In a large boewl, combine all-purpose flour, Whole Grain Wheat flour, flaxseeds or wheat germ, cocoa powder, baking powder, and salt. Make a well in the center of flourmix, set aside.

In a meduim bowl, whisk egg, sugar, oil, and milk or I use Carb Hood! or Almond Milk. Blend until well mixed. Stir in banana & zucchini if using. I omitted the zuccini.

Stir just until moist and well broken up. Fold in choclate pieces until blended. Pour batter into prepared baking dish, spreading evenly.

Bake about 25 min. or until top springs back when touched. Cool completely on rack. Cut into squares & serve.

    When I first looked at the recipe I thought, "Oh no! There are no directions!" Then I decided to make it anyway, just by intuition. Very good! I replaced the canola oil with applesauce and added a 1/2 t. vanilla. I put it in a 13x9 pan sprayed with cooking spray and baked at 350 degrees 25-28 mins. - 6/5/10

    OOps, still not feeling well! Didn't notice the cut/paset error until U pointed it out. Got it corrected. Tip, the Almond Milk made a great taste too!
