Fried Spinach

Ingredients
Two Tablespoons olive oil1/2 large purple onion - chopped into large pieces. 10 oz box sliced Mushroomsone piece of garlic from clove- chopped 12 oz bag of fresh spinach- whole leafsalt and pepper to taste
Directions
In large skillet put in olive oil , onions and garlic, sautee til ions are soft, add in mushrooms, cook until they are brown and soft. Add in whole leaf spinach and cook until soft. Not to much so that the spinach is like wet grass. Salt and pepper to taste. Serve hot. Serves 4 - 1/2 cup servings

    OMG! I added more spinach, garlic, and mushrooms. I also added some garlic and onion powder along with some sundried tomatoes. The sundried tomatoes made the difference in taste. I added the 4 slices of the tomatoes and some oil for jar. - 3/27/11
