Puttanesca Sauce

Ingredients
26g Anchovies20g olive oil (preferably from anchovies)2 cloves of garlic (chopped)400g of chopped tomatoes1 large pinch of mixed or Italian herbs100g sliced black olives50g capers
Directions
makes 4 servings

Heat a frying pan and add the anchovies and oil (A single 2oz can undrained is fine)

Cook and stir breaking up the anchovy fillets, until it becomes a paste.

Chop and add the garlic and allow to cook for 2 minutes.

Then add 1 can of chopped tomatoes and some mixed herbs. Give the sauce a stir and leave on a low heat for 5 minutes.

Add sliced black olives and the capers. Leave on a low heat for 2-3 minutes, stirring as needed.

Serve mixed through Spaghetti.
