150 g i can't believe its not butter100 g xylitol100 g gram flour100 g doves plain gluten free flour100 g desiccated coconut2 tsp vanilla extract1/2 tsp ground ginger

Preheat the oven to 180˚C. Line 2 baking trays with parchment.
Cream 'butter' and sugar then beat in rest of ingredients.
Divide into 22 balls (each weighing about 25 g), place on baking tray and flatten slightly with a fork.
Bake for 15 minutes or until golden.
Remove from oven and allow to cool for a few minutes, then transfer to a wire rack to cool completely.
