Buttermilk Cornmeal Muffins

1 cup cornmeal1.5 cups lowfat buttermilk1.25 cups all purpose flour1.5 tsp. baking powder1 tsp baking soda1 tsp salt.5 cup sugar1 large egg.3 cup melted butter, cooled
Preheat oven to 400
Line or greas 12 cup muffin tin
1. Combine cornmeal and buttermilk in a bowl and set aside
2. In another bowl combine remaining dry ingredients
3. In a separate bowl whisk egg and butter. Add cornmeal mixture and stir well. Add this to dry ingredients and stir until just blended. DO NOT OVERMIX
4. Spoon batter into prepared muffin tin filling each cup 2/3 full.
5. Bake in preheated oven 15 minutes
