Sweet Pepper & Onion Crustless Quiche

Ingredients
1 cup chopped bell peppers1/2 C chopped maui sweet onion6 small sweet peppers cut into rings3 eggs3 egg whites1 1/4 c nonfat milk1/2 c flour1/2 tsp baking soda1/4 tsp kosher saltdash of cayenne or California ground hot pepper1/2 c shredded low fat cheese
Directions
Preheat oven to 375 degrees.
Saute onions and peppers until soft in non-stick pan with a little cooking spray. Set aside to cool.
Combine eggs and milk and add flour, soda and salt. This part is tricky--don't panic if there are some lumps.
Add pepper mixture and stir well. Pour into a pie pan sprayed with cooking spray. Top with cheese and additional whole uncooked sweet peppers (for garnish, if desired.)
Bake for 25 minutes or until center is set and a knife inserted in center comes out clean.
Serving: 1/6 of quiche.
