Vegetable Burrito

Ingredients
1/2 potato diced1/4 green bell pepper diced1/4 red bell pepper diced1/4 onion dicedCorn from 1 ear2 tbsp oil2 flour tortilla1/3 cup shredded cheddar cheese
Directions
Saute vegetables until tender

Spread 1/2 of the cheddar cheese on each flour tortilla. Microwave for 30 seconds, or until cheese is melted. Add 1/2of the vegetables to each, roll and serve.

Makes 2 burritos.
