Waistline Chili

Ingredients
1 T extra virgin olive oil1 C chopped white onion1 C diced green pepper3 cloves minced garlic1 Lb 93% lean ground beef3 T chili powder1 15 1/2 oz can black beans, drained1 15 1/2 oz can dark red kidney beans, drained1 28 oz can diced tomatoes with juice1 32 oz can tomato juice
Directions
In a dutch oven, sautee' white onion, green pepper and garlic until translucent. Add ground beef and cook until broken up well and pink color is gone. Skim off any excess fat. Add chili powder, black beans, red kidney beans, diced tomatoes, and tomato juice. Bring to a boil and reduce heat. Simmer for 45 minutes or longer. Serve with saltine crackers. Makes 10 1 cup servings. (Nutritional values do not include crackers)
