Ingredients
Directions
Mix half a cup of ANY whole wheat pancake mix (I recommend a blend of whole wheat/whole wheat pastry flour.I use Hodson Mill Whole Wheat Pancake Mix), half a cup of uncooked rolled oats, 1 egg, 2/3 cup of low fat/skim milk, 1/3 cup of water, a cup of berries (I use raspberries), And 1 table spoon of vegetable (or olive) oil.
Mix all ingredients in a big bowl.
Spray cooking surface with pam. Cook on a frying pan at medium heat or a griddle on medium heat. Cook/flip until golden brown. =] MMMmmm!
Makes 6 or more pancakes (depending on how big you make them).
Feel free to add REAL maple syrup (will change nutritional info a little). Use it sparingly, the pancakes will be sweetened from the berries.
