Couscous with Honey Dijon dressing

1 cup Couscous1 cup Orange Juice1/2 cup Water1 tsp Salt1 tsp Coriander leaf, dried, 1/4 cup ground Cinnamon1/4 tsp Pepper1/4 cup Cranberries, dried1/4 sliced Almonds1/2 cup Cucumber (with peel)1/3 cup red Onions chopped3 Tbsp Cilantro2 Tbsp Renee's Honey Dijon Salad dressing
Combine 3/4 cup orange juice, water, 1/2 tsp salt, coriander, cinnamon and 1/8 tsp pepper in a saucepan. Bring to boil. Remove from heat and add couscous and cranberries. Cover and let stand for 5 minutes. Fluff with a fork. Transfer mixture to larger bowl.
Combine remaining 1/4 cup orange juice, 1/2 tsp salt, 1/8 tsp pepper, lime juice and mustard stirring with a wisk. Gradually add salad dressing to mixture and drizzle over couscous tossing to coat.
