Salsa Chicken

2 Boneless Skinless Chicken Breasts1 Cup Long Grain White Rice1 Cup Salsa1 Tbsp Olive Oil1 Cup Reduced Fat Shredded Cheese (Optional)
Chop up the chicken into chunks. Coat the bottom of the pan with olive oil and turn on the heat, medium high. Stir fry the chicken until white.
Add rice in with the chicken, stir, and then immediately add salsa. Fill the salsa jar half with water, so none of the rice ends up sticking to the pan, and add to the mixture.
Stir, then place aluminum foil over the pan. Set heat to Medium. Let cook for 20 minutes, stirring occasionally if desired and/or adding in cheese before water is evaporated.
Makes 2 servings.
