Grilled Eggplant Stackers

Ingredients
1 Eggplant (washed)1 1/2 Tomatoes6 oz Cheddar Cheese In 20 Slices1 Tbsp Olive Oil
Directions
Cut eggplant into 10 rounds. Brush one side of each eggplant slice with oil. Place tomato on top of each eggplant slice and brush tomato with oil. Place 2 slices of cheese over tomato and top with eggplant slice. Brush top with oil and grill for 7-8 minutes. Flip stacker over and grill for another 7-8 minutes.
Makes1 stacker per serving
