Udon Noodle Soup

Ingredients
2 cups lo sodium chicken stock1 cup beef stock1 pkg. fresh Udon noodles (7oz. pkg.).5 tsp. fresh ginger (grated)2 medium scallions sliced thinly.5 tsp. garlic powder.5 tsp. onion powder1/3 red chile pepper (small thai red pepper) (minced) .25 jullienned carrots.5 tsp. sea salt.25 tsp. black pepper.5 chicken breast, cut into 1 in. strips and sauteed in nonstick skillet (season to taste)
Directions
prepare all of the ingredients so that they are ready to put together.
Place both stocks in a saucepan and bring to a boil. Add chile pepper, grated ginger, salt, pepper, jullienned carrots, one of the scallions, onion powder, garlic powder, let simmer for about 5 minutes. Add fresh udon noodles and cooked chicken. Let soup simmer for 5 minutes longer.
That's it! Easy and delicious!
