Fresh Tuna Burgers with Red Onion Salsa

For the salsa 1 red onion, finely diced 2 plum tomatoes, seeded and chopped 1 green chilli, seeded and finely chopped juice of 1 lime 1 teaspoon olive oil salt and freshly ground black pepper For the burgers 400 g (14 oz) fresh tuna 1-2 teaspoons mustard (strong but not blow your head off stuff)1 tablespoon sesame seeds oil, for spraying
Begin by making the salsa. stir all the ingredients together and set aside at room temperature for at least an hour to allow the flavours to infuse .
Place the tuna In a food processor and pulse until coarsely minced. Transfer to a bowl and mix With the mustard, sesame seeds and some salt and pepper.
With damp hands, shape the mixture into 4 even-sized burgers.
Pre-heat the oven to 200C/400F/Gas 6.
Spray a baking sheet with oil and arrange the burgers on the tray. Spray with a Iittle more oil and bake for 15 minutes until golden brown and just cooked through.
Serve with toasted ciabatta buns and lime slices (not included in nutritional values)
