Syd's Vegan Tofu Burger II

Ingredients
1 lb tofu2 medium mushrooms, chopped2 green onions, minced1 medium carrot, shredded1/2 cup peas6 Tbsp flour2 tsp baking powder2 Tbsp soy saucepinch of turmericNonstick cooking spray
Directions
Preheat oven to 350. Saute vegetables in cooking spray until carrots are soft.
In food processor, combine all but 1/2 cup of tofu, soy sauce, and pinch of turmeric, and blend until smooth. In a separate bowl, crumble remaining 1/2 cup tofu, add flour and baking powder and mix. Combine all ingredients in bowl and mix well. With wet hands, shape mixture into 5 balls, then place on cookie sheet sprayed with nonstick cooking spray. Flatten into patties about 3/4 inch thick. Spray tops with cooking spray, then bake, using convection setting if available. Bake for 15 minutes, or until patties are firm enough to turn without breaking. Turn over and bake another 15 minutes, or until tops are browned and patties are firm.
