2 (15 oz) cans black beans, drained and rinsed2 (15.25 oz) cans whole kernel sweet corn, drained (can substitute frozen corn)1 (14.5 oz) can diced tomatoes, drained (can substitute 2-3 large fresh tomatoes, chopped)1 (1.25 oz) packet taco seasoning mix1 very finely chopped jalepeno pepper1 bunch fresh cilantro, finely chopped1/2 cup finely chopped red onion2 limes, juice of
In a medium to large bowl mix the corn and taco seasoning mix. (If you're using frozen corn this will give the corn time to thaw while you're preparing the rest of the ingredients.) Gently mix in the rest of the ingredients.
Try to make 2 or 3 hours before you plan to serve the salsa so the flavors have time to mix. Makes 16 servings.
