Cous Cous Salad

Ingredients
1 1/2 T Olive Oil 3/4 cup Lemon Juice 1 cup diced cucumber 1 cup Parsley, minced 1 can chickpeas (garbanzo beans) 1 1/4 cup whole wheat couscous 1 t Dijon Mustard, 1 T. chopped fresh mint, 1 cup diced tomatoes or approx 20 grape tomatoes, halved
Directions
Cook couscous in 1.75 cups water or chicken broth. Mix remaining ingredients. Season with salt to taste.
