3/4 cup all-purpose flour1 1/4 cup whole wheat flour6 TBSP ground flaxseed4 TBSP wheat germ2 TBSP Cinnamon Plus Spice Blend (Pampered Chef)3/4 tsp baking soda1/2 tsp baking powder1/2 tsp salt2 TBSP Smart Balance Omega Oil1/3 cup sugar1/3 cup honey1/2 cup fat-free milk3 1/2 large bananas1/2 egg1/2 cup chopped walnuts (optional)
Mix all ingredients together until well-blended using an electric stand mixer or mash bananas and mix by hand.
Can use cinnamon, nutmeg, cloves, allspice, ginger in place of Cinnamon Plus Spice Blend.
Use non-stick cooking spray on pan(s). Bake at 325 degrees for about 30 minutes (16-18 muffins) or about 45 minutes (4 mini loaves or 1 regular loaf). Use toothpick to test for doneness.
Adding walnuts adds 25 calories, 2.5g fat, 16.5mg potassium, 0.5g carbohydrate, 0.25g fiber, and 0.5g protein per serving.
