Ingredients
5-4oz chicken breasts, thin sliced3 T butter2 T olive oilwhole wheat flour for dredging1/4 c capers, rinsedparsley for garnishingmushrooms, optional
Directions
salt and pepper the chicken 5-4 oz pieces. dredge thin sliced chicken breasts in whole wheat flour. heat 1 T olive oil, 1 T unsalted butter in a skillet. when begins to sizzle add chicken and brown on each side. Repeat for remaining 2 or 3 pieces. Remove. Add broth, lemon juice, 1 T butter, capers, parsley. reduce to a broth. Add mushrooms if desired.
