Chicken Parmesian

Ingredients
4 chicken breasts(Split in half)I large can of stewed tomatoes4 cloves of garlic sliced1/2 cup fresh mushrooms1 small white onion(diced)2 medium zucchini slicedcarrots 2 large peeled and sliced carrotsmozerella cheese 1/8 cupcheddar 1/8 cup1/16 cup parmegian cheese2cups cookes rice noodles
Directions
Saute chicken breast in garlic and olive oil with mushrooms, onions, zucchini and carrots. Add to a large baking pan. Top with a large can of stewed tomatoe.Add 1/8 cup of shredded low fat cheddar, and 1/8 of cup of low fat shredded mozerella, and then add 1/18 of a cup of low fat shredde parmigian cheese. Bake in the oven at 350 for 30 minutes or until cheese is bubbling.Serve over low fat rice noodles or whole wheat reduced fay pasta.
