Chicken & Peppers & Other Stuff Too

Ingredients
1 lb boneless skinless chicken breast cut into strips1/2 c. each red, green, yellow (or orange) bell pepper1/2 cup fresh mushrooms, sliced1/4 vidalia onion sliced2 tbs evoo1/4 chicken broth1/4 white wine2 tbs italian dressing
Directions
Sauté chicken breast strips in evoo. Add sliced veggies, chicken broth and wine. Cook over high heat until chicken is done and veggies are crisp/tender. Add 2 tbs italian salad dressing (if you wish, not completely necessary).

I served this on a loaf of toasted wheat french bread, slicing the bread lengthwise to make open face sandwiches.
