Sun-dried tomato and feta-stuffed chicken breast

Ingredients
4 (6oz each) Tyson All Natural BoneLess SkinLess Chicken Breasts1/3 cup Athenos Reduced Fat Feta Cheese 1 tsp dried Basil 2 sun-dried tomatoes (from jar)1 clove garlic. mincedOlive Oil, 2 1tsp 1 can no-salt added diced tomatoes
Directions
Combine feta, tomatoes, basil, and garlic in small food processor and chop until well mixed (or, chop tomatoes, add to cheese and spices and mash with fork.) Butterfly chicken breasts and spread with 1/4 cheese mixture. Fold chicken back over cheese. Preheat oven to 425. Heat oil in oven-proof skillet over med-high heat. Add chicken and brown on each side (about 2 minutes per side) Transfer skillet to oven. Pour canned tomatoes over chicken and bake until chicken is cooked through, about 20 minutes. (I don't have an oven-proof skillet, so I just preheated my oven with a shallow pan in it and added the chicken to that when it was time to bake it.)

    VERY good! Very flavorful! Wasn't able to butterfly my fillets so pounded them. Should have reduced baking time because they were a little dry. Next time I will butterfly or will cook less time. Added Mrs. Dash Sun-dried Tomato Garlic on the outside. Will definitely make again! - 3/14/10

    I made this tonight, and followed another reviewers idea to add kalamata olives and marinated artichoke hearts to the filling. I served it over a brown rice & quinoa salad. I liked it very much. I will be making this again. - 10/4/13

    Sorry for the confusion. You spread 1/4 mixture on EACH breast, so you would use all of it between 4.
