Tofu Fettuccini Alfredo Recipe

Ingredients
  • 2 cups cooked fettuccini
  • 12 oz. soft tofu, drained
  • 3 garlic cloves, minced
  • 1/4 cup grated parmesan cheese
  • 1/4 cup grated romano cheese
  • 1 tablespoon olive oil
  • 1 tablespoon onion powder
  • salt and pepper to taste
Directions
1. Cook the pasta according to the manufacturer’s instructions.



2. While the pasta is boiling, place the drained tofu, garlic, both cheeses, olive oil, and onion powder into a blender. Blend until smooth.



3. Pour soy mixture into a saucepan. Warm over medium heat, stirring occasionally.



4. Toss drained pasta with alfredo sauce.

    I'd never tried tofu before& was kind of skeptical, but this was very good! I halved the garlic & added about 6 oz. of frozen broccoli to the pasta as it was boiling. Served with a grilled pork loin - my husband went back for seconds and asked that I make this again. Not afraid to try tofu anymore. - 1/28/09

    Added spinach and a little bit of bacon. It was delicious - I like tofu but it didn't taste like it at all, so it's safe for tofu-phobics. I didn't miss the cream in the least! Cooking the garlic in the pan first like others suggested makes it even more fabulous. Will absolutely make again. - 9/7/10

    Really good! Hubby couldn't believe it was tofu - went back for 2nds! I accidentally put in several times the garlic required, but it tasted fine. I used the oil in the recipe to saute the garlic instead of blending it in w/ the tofu, then warmed the sauce with it in the same pan. Primo! - 2/5/10

    I roasted the garlic & added a can of evaporated milk to give it a more "cream" flavor. I put it all in the blender until perfectly smooth & then let the seasoned tofu/milk chill for a couple hours before dinner. My entire family *loved* it but the tofu is my secret. (haha!) - 10/22/09

    Wow. Who would have known! I cooked the garlic in the oil first before adding it to the rest of the ingredients. Only had parmesan cheese and added a Tbs. of Italian spices. I will be making this again! - 10/3/09

    This was really great. This was my first attempt with Tofu and I wasn't so sure what wouid happen - but it was awesome. It was very garlic-y. So next time, I would saute the garlic before adding it - that should make it sweeter and less pungent. Even my DH liked it after whinning about tofu. - 7/14/09

    I was so amazed at the consistency. I added a little soymilk like everyone said and it was awesome! I waited til after to tell my fiance. He loved it. I added a pack of frozen vegs (broc/col/carrots). I realy felt like I was cheating and having a healthy meal. - 11/14/07

    It tasted better the next day with some sea salt to knock out the slightly weird aftertaste of the tofu. I used whole wheat spaghetti instead of fettuccine and it made very large portions. - 5/16/09

    Sounds good - I'll have to try it with some chicken and added veggies. If you roast the garlic (don't peel first) in a pan, the bitterness goes away. Once you receive a few brown spots on the outside of the garlic - let it cool, then peel. - 5/6/09

    Several people are mentioning that they added milk or soy milk to make it less thick. I notice that step 3 of the recipe says to put "soy mixture" into a sauce pan. Was soy milk supposed to be an ingredient that was left out? - 2/27/09

    I was so happy with how this turned out! You can't tell it's made with Tofu, so kids eat it without any complaints. The only thing I did different was added non fat milk to thin it out a little and used whole wheat Penne Pasta. I would definetly make this again!! - 11/13/07
