Broccoli Casserole with Crumb Topping

2 slices white bread1/2 cup shredded mozzarella cheese2 T parsley2 T olive oil1 sm. clove garlic, finely chopped6 c. broccoli florets or cauliflower1 lg. tomatoe, diced1 envelope Lipton Recipe Secrets Onion Soup MIx1 cup water
In small bowl combine bread crumbs, cheese, parsley, 1 T oil and garlic. Set aside.
In 12 inch skillet, heat remaining 1 T oil over medium heat and cook broccoil, stirring frequently. 2 min. Stir in onion soup mix blended with water. Bring to a boil. Then reduce heat and simmer uncovered, stirring occasionally 8 min or until broccoli is almost tender. Add tomatoe, simmer an additional 2 min. Spoon vegetable mixture into 2 qt. baking dish. Top with bread crumb mixture. Broil dish 1 1/2 min or until golden brown and cheese is melted. Serves 6.
