Lemon Poppy Seed Cake (Adapted from All Bran)

1 cup whole wheat flour1/4 cup sweetener (I will use Erythritol)1 tsp baking powder1/2 tsp baking soda1/4 tsp salt1 TBSP poppy seeds1 serving of Smart Bran cereal1/4 cup non-dairy milk2 TBSP ground flax seeds + 4 TBSP warm water3 tsp oil1/3-1/2 cup unsweetened apple sauce1 container of lemon non-dairy yogurt1 TBSP lemon juice1 tsp powdered sugar
Preheat oven to 350 degrees.
Mix the flour, dry sweetener, baking powder, baking soda, salt and poppy seeds together. Set aside.
In another bowl, mix the Smart Bran, non-dairy milk, flax mixture, oil, apple sauce, lemon juice and yogurt together. Let stand until cereal softens. Once cereal has softened, add the dry mixture.
Spray non-stick spray into an 8 x 8 baking pan. Pour the mixture into the pan. Bake for about 25 minutes of until toothpick comes out clean. Let cool and then dust with powdered sugar.
