Chicken Pozole

Ingredients
4 cups diced chicken29 oz white hominy19 oz mild enchilada sauce1 red onion3 cups shredded cabbage
Directions
In a pot, place all of your chicken. Cover with desired amount of water for your soup. Bring to a boil.

Add hominy and enchilada sauce. Cook for about 20 minutes.

Add 1/2 of the red onion and gook through; Salt to taste.

Serve in bowls and add shredded cabbage and remaining onion to your liking. You can also add lemon juice.
