Homemade Chicken Fried Rice

Ingredients
4 C streamed brown rice (refrigerated)1 medium onion chopped1 C carrot chopped1 C celery diced1 Lg egg 1 C frozen peas10 oz Butterball Grilled Chicken Strips diced4 Tbsp soy sauce1 Tbsp olive oil
Directions
In large skillet or wok saute chopped onion, celery and carrot in olive oil. Scramble egg in seperate skillet using cooking spray. Add chilled rice, peas, egg, and diced chicken. Cook over medium heat until hot. Toss with soy sauce and serve immediately.
