Coconut Curry Noodles with Mock Beef and Veggies

60g onion, half-moon thin slices5g garlic, minced (one lg clove)1T green curry paste5.5-6oz coconut milk50g bok choy (pak-choi), chopped100g green pepper, chopped rough1 pkg Morningstar Beef Strips
1. Boil water for noodles in pot
2. in another pan, sautee onions in pan with a tiny bit of oil
3. once onions get fairly brown, add whole package of strips
4. sautee "beef" strips for 10-15 mins on med heat
5. add 2oz bean thread noodles to boiling water sometime while cooking beef strips
6. add bok choy, green bell pepper and garlic to beef strips and onion; sautee 2-3 mins
7. drain and rinse noodles, add to rest of ingredients
8. add coconut milk and curry paste, stir and dissolve curry paste
Done! Plate and serve
