Ingredients
2 large sweet potatoes, chopped (about 3c)1 15.5 oz. can of garbanzo beans8 cups of greens (e. g. Swiss chard), chopped1 cup carrots, chopped1 medium onion2 vegetable bouillon cubes1.5 Tbs Tuscan Italian Seasoning1 tsp salt4 cups water
Directions
Bring water to boil. Dissolve bouillon and add onion, salt and seasoning. Add potatoes and boil 10 minutes. Add carrots and simmer 10 minutes. Add greens and cover. Simmer for another 10 minutes, stirring greens into broth as they wilt. You may need to add more water.

Makes about 6 2.5 cup servings.
