Garlic and Herb Oven Fried Halibut

Ingredients
1 c. breadcrumbs1 tbls. basil, parsley1/2 tsp. onion powder1 large garlic clove2 large egg whites, beaten1 egg, beaten2 tbls. flour6 - 6 oz. halibut fillets3/4 tsp salt1/4 tsp blk pepper 2 tbls. olive oil
Directions
Pre-heat oven to 450. Mix first 5 ingreds in shallow dish. Place egg and egg whites in dish. Place flour in shallow dish. Dredge fish in flour. Dip in eggs, dredge in panko. Sprinkle with pepper, salt. Heat 1 tbls. oil in large skillet over med-hi heat. Add fillets, cook 2 1/2 minutes each side. Put on broiler pan coated with cooking spray. Bake for 6 minutes or until fish flakes.

    What a great way to prepare fish! I was actually sad we didn't have enough for seconds, and I almost never say that about fish. (ps... I put the fish onto a rack above a baking sheet in an oven at *400 degrees instead of under the broiler. Crispy all round! - 4/10/09
