Gluten Free/Dairy Free Quinoa Pancakes

Ingredients
1 serving cooked quinoa (1/4 cup dry)1 scoop Rainbow Protein Powder (or substitute)1 cup gluten free flour mix (I used Namaste)2 egg whites1 tsp canola oil1/2 tsp baking powder1/2 cup almond milk (I used Almond Breeze unsweetened Vanilla)
Directions
Mix all ingredients together, and make just like pancakes on a warmed pan.

Makes 8 servings

    I think the quinoa is the seed that is cooked and the Namaste flour is just a all purpose gluten free flour mix. I am sure you could sub any gluten free flour mix. - 6/1/11
